Holiday Egg Dish

 

I usually plan 2 eggs, 1 slice of bacon, 1 ounce of shredded smoked Gouda cheese and 1 ounce of cream (light or half and half) per person.

 

Cook bacon until crispy and then cut or crumble into small pieces.

 

Crack eggs and mix with cream to make a scrambled egg mix.

 

Pour egg mixture into a baking dish (no more than 2/3 full).

 

Sprinkle in cut up bacon and shredded cheese.  It usually floats so push into egg mixture with the back of a spoon.

 

Bake in over until done, stirring frequently as the eggs cook.  They cook near the edges first, so keep scraping the pan sides and mixing into the mixture until they are all cooked.  They continue to cook a little as they sit, so don’t be afraid to take them out before they are quite done.

 

Cooking time and temperature can vary.  For smaller pans try 350 degrees for about 15 to 20 minutes.  For larger pans, I usually go between 375 and 400 degrees and it can take 30 to 40 minutes.
