Asparagus App
You can adjust quantities based on how many you want to serve.
You will need:
Plain, soft white bread. Squared off sandwich bread works best but any soft, white bread is OK.
Asparagus spears.
Sliced swiss cheese
Grainy mustard
Melted butter
Cookie sheet
Oven at 350 degrees
Prep:
Start by cutting of the crust from your bread. Then roll each slice flat. Place flattened slices in single layers between damp towels to keep them from drying out as you work.
If you are using canned asparagus, drain out the liquid from the can. If you are using fresh asparagus, you will need to cook them until just tender. Rinse them and then cut off the bottoms so they are about the size of the width off your bread slices. Medium sized spears work best. You can cook fresh asparagus anyway you like by boiling, steaming, grilling or roasting. I like to grill or roast them in an oven best. Coat with olive oil, salt, pepper and a little lemon juice and cook until just tender. If you use canned, boiled or steamed asparagus omit the olive oil, salt and pepper
Stack slices of swiss cheese then cut into strips about ½ inch wide.
Melt butter
Assembly:
Place a slice of flattened bread on your work surface. Cover bread with grainy mustard. Place a stick of swiss cheese in the center of the slice on top of the mustard. Cover the cheese with an asparagus spear and then roll the bread around the cheese and asparagus. Place the log on a cookie sheet with the seam down. You can place them close to each other on the cookie sheet, this helps to keep them from unrolling. Next brush the tops of each log with melted butter.
Cooking
Place cookie sheet in 350 degree oven and cook until the cheese melts and the top becomes browned. Remove and serve.
